It’s been quite a while since I’ve baked anything, so when I realized that Stephen and Ash’s apple tree was dropping a tonne of apples I saw an opportunity! Stephen and I were getting together to play pokemon, so I figured it wouldn’t be hard to talk him into baking pie as well.
I used the same recipe that Roopa and I learned at pastry school. It never fails to disappoint! I did find that this pie turned out quite lemony for whatever reason, but it was still good enough that we had to restrain ourselves from eating a second piece immediately!
Poor apples had a tough time with all the crazy weather we’ve had lately!
This was probably the first time I’ve used this recipe and not let the dough sit in the fridge overnight. I still found that the moisture distributed itself well through the dough, and found that a few hours in the fridge was enough to keep the pie flakey after baking.
