HEALTHY PEANUT BUTTER CHOCOLATE CHIP COOKIES
I wanted to make healthyish cookies that were low in sugar, so I adapted this recipe. I didn’t have everything – my Vancouver kitchen is not as well stocked as Edmonton – so I skipped the nutmeg, clove, and coconut. I used chopped up almonds instead of peanuts, and also used sugar free chocolate chips. I baked them for about 24 minutes and they seemed to turn out pretty well. They definitely are not very sweet cookies, but that was kind of the point.
