I always have left over egg yolks sitting in my fridge, probably because my favourite frosting recipe calls for 10 egg whites. Last weekend I made a double batch of this frosting to assemble my Auntie Angie’s 50th birthday cake (post in progress) and this weekend my mom wants to make a batch for a mother’s day cake. That’s 30 eggs yolks!
I must admit that my extra yolks are often not used in a timely manor, and end up getting tossed out. I don’t like wasting ingredients, so I decided to hunt around for recipes that use egg yolks. I ended up finding this link which has a huge list of recipes. They’re all categorized by the number of egg yolks that they use, which I think is really helpful to make sure they all get used up. Score!
