Pfeffernüsse Cookies


This directly translates to “pepper nuts” and are a traditional European spice cookie. Black pepper used to be very rare and expensive, so this was a special ingredient in a cookie.

  • 2 whole eggs
  • 80 g brown sugar
  • 80 g granulated sugar
  • lemon zest
  • 200 g cake flour
  • 30 g almond flour
  • 4 g baking powder
  • 3 g cinnamon
  • 1 g cardamom
  • 1 g nutmeg
  • 1 g ginger
  • 1 g allspice
  • 1 g cloves
  • 1 g black pepper
  • 20 g crystallized ginger
  • 10 g candied orange (or other fruits)


  1. Whisk together eggs and sugars in a bowl
  2. Sift together all dry ingredients in a separate bowl and mix in chopped candied orange and ginger
  3. Add the mixtures together and work them together
  4. Refrigerate for at least a few hours
  5. Split in half and roll into logs, and divide into 24 portions
  6. Roll into balls and bake at 325 F until light brown



  • 160 g icing sugar
  • 40 g corn starch
  • 2 g vanilla
  • water (as needed)


  1. Mix together all ingredients until desired texture is obtained
  2. Glaze the cooled cookies
