Kipferl Cookies

The kipferl cookie is similar to a sugar cookie, and is an Austrian cookie that means “crescent”. They are allegedly supposed to represent the first snowfall on the rooftops of Vienna.

German pastries day 5 (5 of 8)

INGREDIENTS

  • 110 g cold butter
  • 40 g granulated sugar
  • 1 pinch salt
  • 1 mL vanilla
  • 1 egg yolk
  • 150 g cake flour
  • 50 g almond flour

DIRECTIONS

  1. Combine (don’t cream) the sugar and cold butter
  2. Mix the egg and vanilla into the butter mixture
  3. Sift the dry ingredients in and combine well. Chill for a few hours
  4. Knead dough to make it pliable
  5. Roll into a 16″ log and cut off 1″ pieces
  6. Roll each piece into a ball, and then into a log. Thin out the tips and make crescents
  7. Bake at medium heat until just the tips have begun to brown
  8. Put icing sugar on the cookies immediately after baking
